Two Ingredients, That's It!
If you've never tried fresh-caught Dungeness crab with real wasabi, now's your chance! Commercial crabbing is underway.
Dungeness crab, straight from the ocean, paired with real, local wasabi is a beautiful combination. Sweet, cold Dungies don't need much, just something to wake them up, and freshly grated wasabi does exactly that. Real wasabi enhances the crab's briny sweetness, adding a clean, green heat that lifts the flavor without smothering it. As the wasabi’s gentle spice blooms, it brightens the crab’s buttery texture and ocean-fresh aroma, creating an incredible taste. It’s the kind of pairing that feels rooted in the coast and the land, where a few good ingredients, treated with care, do all the talking.
Preparation
Step 1
- Fill a large pot half to three-quarters full with water and bring to a rolling boil
- Add salt, Old Bay, or other seasonings (optional)
- Keep two crabs on ice to keep them docile
Step 2
- Carefully place the crab in the pot, shell side up
- Boil for 12-15 minutes - outside is best if possible
Step 3
- Remove the crab with tongs and shock in ice water bath for 10 minutes
- After 5 minutes, shave the skin off your wasabi rhizome and grate a few table spoons of real wasabi
- Like fine wine, the complex flavors of real wasabi open up with time
- Crack your crab and add wasabi to each piece to taste

- 2 fresh-caught Dungeness crab (roughly 2 pounds each)
- 1/4 pound real wasabi
- Seasoning/lemon wedges optional
